The term 'Barback' is given to a member of staff that does not serve but supports the bartenders. Service and productivity of any bartender is only as good as the barback behind him.

Generally barbacks are responsible for the following:
Cutting Fruit
Making Mixes
Filling ice wells
Waste Disposal
Glass cleaning and distribution
Set-up hands
breakdown hands

Barbacks spend most of the night behind the bar and shouldn't be confused with glass/ashtray collectors
